Most people probably don't really think about clothes in terms of woven or of jersey. They are words that are mostly used by people who work in the textile industry. In French, the words are a little bit more complicated. Woven is called Chaine & Trame whereas Jersey is called Maille. Note that the French word "maille" also means "knitwear" which has the same technical aspect as the jersey fabrics. There is actually an English equivalence of Chaine & Trame that is called Warp & Weft but it is too technical for most people to remember. So how do you tell apart Chaine & Trame and Maille? It's actually very simple. Chaine & Trame fabrics usually have the vertical and horizontal crossovers if you look at your dress shirts, trousers, etc. Some of them might have different weaving patterns depending on their construction; Maille fabrics, on the other hand, have more of the loopy structure like the chunky hand-knitted scarves from your grandmothers if you look at them closely. Most of the stretchy fabrics are usually "maille" like all of our T-shirts and underwear. Can you see the difference now?
